Gluten?. . why not?

I see that a lot of people avoid gluten.
I realize that some might have an alergy or celiac disease but, other than that, what is the aversion. Sorry if this has already been covered.
i think allergies are the main reason as with soy products :)
I have thryoid disease and have been told to avoid wheat products because of the gluten. In my case it doesn't make me ill, but it does make me retain like mad. Unfortunately doctors in Spain are not at all good at explaining why.
Yeah, I'd say it's mostly because of allergies/intolerances. The fact that we seem to have a lot of gluten-phobes 'round here is probably down to the fact that veg*ns are more aware of their diet in general. I don't doubt there are a lot of people sensitive to gluten who just never put two and two together. Also, I suppose anyone who eats a lot of seitan/faux meats/grain products would notice a sensitivity to gluten a whooole lot faster than someone who subsisted on meat and potatoes.
In addition to that, Narcissus, is the frequency gluten and dairy (casein) intolerances appear together that lead many GF folks into the world of modified cooking; and most dairy free lifestyle/living and recipe resources are found among the veg*n ones.
I was diagnosed with Celiac disease, the inability to eat/drink gluten, in 2000 at the age of 30. It makes me terribly ill if I eat or drink it.
