gluten free baking troubles

Okay. Every single gosh darn time I try to make frickin gluten free muffins they fail. They end up crunchy and lovely on the outside and gummy and inedible inside. Any ideas what is wrong with my batter???
I have that problem with my gluten free banana bread. Not fully baked in the middle.
Sounds like it could be a leavener fail.... Too much baking powder can do that, regardless of the gluten content.
Are you using agar? that could be it too.... I remember reading some folks have similar probs w/ recipes using it.

I've had the same problem with several GF muffin and cake recipes, although others have worked for me. (E.g., the cupcakes from Babycakes all turned out gross, but the GF ones from VCTOTW always come out great.) I've never had a problem with any GF cookie or brownie or similar less-leavened thing, though.
I would love to hear any advice on what might be making the difference between the ones that work and the ones that don't. I'm almost completely sure it's me doing something wrong, but I wish I knew what that wrong thing was. :-\

The Babycakes banana bread was pretty nasty. But when I made the peanut butter blondies from VCIYCJ using Isa's gluten free flour blend, it came out well
My brownie bites are a crap shoot though. Sometimes they come out perfect and other times they're sunken in.
