Gluten Free Baking Mix?

Hey everyone,

I was diagnosed earlier this year with Celiac Disease, and have been trying to cut gluten out of my diet...which until recently has entailed *no* baking of any sort for me :(

All the different gluten free flours terrify me, to be honest!  I am so confused about how to properly bake with/mix/use all of them, too many options!

I was at my HFS earlier today, and they had several gluten free "baking mixes"

Now..has anyone used these? Do you have a favorite brand?  Are they good for all baking (cookies, pies, sweet and savory breads, muffins, etc) or are you limited in its use?

I haven't used a baking mix, and I'm not gluten-free myself, but I do work with a lot of gluten-free peeps. I can recommend a few things:
* Bob's Red Mill all-purpose gluten-free flour. It's cheaper than many and works pretty well. It can be used interchangably with regular flour.
* Mary's Gone Crackers cookies and crackers (and sticks and twigs) - they're already made up, but SO good and healthy too!
* Food For Life Brown Rice tortillas - yummy!

I know that wasn't exactly what you asked for, but I don't really use baking mixes. Hopefully that will help at least a little - and good luck with your quest!

I'm still learning about what I can/can't eat, so every little bit helps.

I'm not so sure about the baking mixes myself, but I figured it was easier than learning all the ins and outs of mixing flours for each thing I want to bake.  I've been reading a bit about it, and it's making my head spin!

I prefer the Arrowhead Mills gluten-free flour. The Bob's Red Mill gf flour has a strange taste.

Thanks Saskia...I saw some of that today.  Is it good in all kinds of baked goods?

It's an all-purpose baking flour. I've used in banana bread, muffins and brownie bites.

I haven't tried that brand, Saskia - good to know! I agree - the Bob's can have a bit of an aftertaste. I just hadn't found a better one. I'll try the Arrowhead Mills for my next GF cooking class.

I love Arrowhead Mills' GF baking mix, something to keep in mind with vegan baking especially when using is it is a self-rising baking mix, so go easy on the leavening!!!
