freezing tofu

i saw a recipe for spicy tofu nuggets on here and I wanted to make it for a potluck I am having tomorrow night.  My question is- When u freeze the tofu... do I freeze it in the water (in the package it is in water) or do I drain the water and just freeze the tofu? Thank you.

you can do either.. but its easier to just freeze the tofu, sans water, cuz when you defrost it you have to squeeze out the extra water anyways.. freezing the tofu gives it a spongey, pourous quality.. i like to call it sponge-fu once its been frozen hehe

I press before I freeze - makes it easier when you defrost.

I always take my tofu out of the package, drain it, and then slice it up into serving size portions before freezing it.  This way the tofu thaws a lot quicker, and it is easier to press the water out of a serving-size slice of tofu than a great big slab of it.

i used to freeze my tofu in the packages, until i found one brand where the plastic wasnt very strong and made the tofu taste like bleach....  now if i freeze it, i take it out and put it in a freezer safe container or bag.

I do the same thing...seems to work well.

Really, there is no wrong way to freeze tofu as this thread shows!
