Favorite pizza topping(s) (excluding dairy)

My son can't have dairy & he can't use nutritional yeast in order to try a cheese sub, so I wanted to ask everyone:

What are your favorite ways to top pizza?

Maybe you'll have ideas to share I've not tried or thought of.

Who knows? Maybe one did get the idea from another. I know I've seen a recipe like the one you said in The Whole Foods Cookbook. Ooh! I checked that Now and Zen Epicure book on Amazon and it looks good! Gotta definitely get it at the library! Thanks!

I honestly haven't used too many recipes from it because it's all quite fancy... a veggie aspic, cream of watercress soup, etc. I got it because I LOVE her (vegan) Japanese cookbook, and I think so far I've only made the egg-type things from Now & Zen, like "Aki's Scrambled "Eggs"" and the tofu omelet... the "eggs" had way too much seasoning for me, and the omelet tasted fine but didn't really hold together (but alas, I wasn't using a non-stick pan). Interestingly, the author was also the one behind all the Now & Zen products that used to be... UnTurkey, Hip Whip (which was GREAT, imho, better than soyatoo for sure...), and so on.
