does anyone know what to do with october beans?

and/or turnips?  i got some october beans and some turnips at the farmers market and don't really know what to do with either of them.  the october beans are like pole beans, but are red and white instead of green.  so i guess i could just steam them or roast them..  any ideas?

Are October beans the same thing as Roma beans? I saw them at our market last week but passed on them because I didn't know what to do with them. I should have bought them because I want to do a pot of chili this weekend. Use them in soup. Also I hear that Roma beans are really good in spaghetti sauce.
They freeze well so if you've got freezer space, stock up for winter.

I have never heard of October beans, but mashed turnips sound good to me. I have never made them before, but I think you make them pretty much the same way as you would make mashed potatoes. Or you could slice them really thin and make turnip chips. Also friend of mine puts turnips in his stews.

I would say cook them first to see what they taste like and go from there. Maybe get one or two different types of beans and make a  soup. Or subsititute them for another type of white bean in a recipe.

i ended up just boiling them like lima beans.  the texture was kinda weird...mushy, but firm at the same time, if that makes sense.  i'd never cooked fresh beans like that before, so it was completely trial and error.  i'd try it again, but maybe change my cooking time (i went 25 minutes...but i think i added the salt too early because the skins were a tad tough).  flavor was nice though...fresh tasting.

I love mashed boiled turnip with your favourite buttery spread, salt and pepper...but then my gran was Danish and I think this is a particularly Danish thing. I also eat my oatmeal with salt instead of sugar and buttery spread instead of "milk."
