Cooking eggplant and artichoke? (Make me something out of the food in my fride)

Today I'm trying to have a whole foods day (lunch is mustard cauliflower poppers...I'm addicted to them).

Around dinner time I'm wanting to make something(s) with artichoke and eggplant...I've never cooked with either of them, and the only time I have artichoke was in some type of dip.

Can someone give me some pointers on what I might be able to cook?

Some things I have in the fridge: leeks, carrots, brocoli, tempeh, maranara sauce w/veggies in it

I'm about to go to the grocery store (stuff I'm getting): Shallots, beets, potatos, onion, caulilfower, tofu

Some things in the cabinet: vegan brown gravy, vegetarian baked beans, powdered red & white miso soups, bread crumbs, onion sandwich roll

You have all the stuff to make something Italian, like pasta or pizza with eggplant and artichoke...

You could also make some kind of Asian stir fry like Kung Pow tempeh with veggies...

Simmer the artichoke for 45 minutes in lemon water, (enough water to make the choke float and a few slices or squeezes of lemon).  Eat with a drizzle of lemon as a snack or dessert.

For dinner I would suggest simmering the tempeh in broth for 10 minutes while you dice the veggies all up.  Saute onion, leeks, eggplant, broccoli and tempeh in olive oil with a touch of veg broth, thyme, basil and sage.  You can make even a bit of sauce by adding enough broth and some earth balance if you like to begin to simmer at the end.  Serve the sauted goodness over a baked potato.

All very whole, visible foods in my opinion.

Egg plant......hmmmm.
Steam cook egg plant.
Remove top blue skin. Take a ladle of cooking oil. Heat it. Add cumin seeds about 1/2 tsp. After 10 seconds, add mashed egg plant, add 2 tsp of Garlic and ginger paste. Add salt, stir briskly . Once oil starts leaving sides after about 10 minutes, remove from stove.
Now, add 1 tsp of lime juice and mix.

Enjoy with bread or rice.
