Cooking / Baking Mishaps!

Has anyone else had issues with silpat baking sheets making their cookies way flatter and crispier than normal? I have sometimes used a silpat to avoid sticking (and even chill the dough beforehand) but I've noticed that when I don't use it the cookies turn out perfect. Weird.
Hmmm, actually I've kind of notice the opposite, not with cookies though.... When I roast veggies or something like that they tend to be a little mushier on the silpat vs. on parchment paper-I figured it had something to do with the heat reflectivity being blocked on the pan?
I' not sure if this is for ALL baking mishaps or just the cookie sheet thing (sorry if it is, just wanted to share my experience)
I tried making lemon cookies once and they totally came out way too dense... like lemon bread! lol...
I also once made zuchinni muffins and thought itd be nice to add more zuchinni, big mistake! The insides were still wettish while the outsides were browning real fast!

I followed the recipe on the back of the canned pumpkin, but somehow forgot to add the sugar. My poor encouraging mother told me "it's not bad, but could be a little sweeter." Of course according to my less than encouraging bratty little brothers I practically ruined Thanksgiving.

aww, haha. I once confused my friend while she was making cornbread and she put in an extra cup? of flour/cornstarch (forget which one) and it came out heavy! lol. I liked them fine so she gave the rest to me. ^_^

sounds amazingly tasty! lol. I have yet to do that one.
During my early vegan baking days, I failed miserably when trying to veganize my favorite chocolate chip cookie recipe. I used applesauce and ended up with a goopy batch of cookies that you could only eat with a spoon.
my friend and i were going to make vegan cupcakes to sell at our local outdoor market last summer, and since i had such awesome results with the chocolate cupcakes from this site, i decided to make some lemon and vanilla cupcakes too(from a different source)....and not just one batch... we were trying to make, like, 100+ cupcakes...the vanilla and lemon ones were HORRIBLE! they turned out spongy and tasteless... (actually, if anyone knows what i may have done wrong there, please let me know, b/c i never did figure it out)
we ended up skipping the market and ate all of the chocolate ones by ourselves! i've never tried to make any other vegan cake/cupcake since then! i just stick with what i know will work. :P
haha. its so weird how different flavors need different techniques...
