Condensed Soup and Southern Food

I am trying to figure out a way to create a good substitution for cream soups (e.g. cream of mushroom) so that I can make veganized Southern dishes. If anyone has any suggestions, please, post. :)

Pureed white beans are also good for the soup thing.
May I suggest Ann Jackson's Heart of the Home cookbook? Wonderful, Southern recipes, vegetarian with a vegan-friendly and adaptable nature. And yummy!
Heat soy milk and veggie boullion cubes. Add a cornstarch slurry and heat to desired thickness. Add whatever veggies diced small (like celery if you're subbing cream of celery soup, mushrooms for cream of mushroom...)
After cooking the veggies for 5-10 min, I toss them in a blender to get the "cream" consistency.
I need to submit this, I thought I had:
Basic Cream-of-Anything Soup
4 teaspoons cornstarch
1 1/2 teaspoons dry "chicken" soup base or bouillon
1 teaspoon dried onion flakes
Dash of dried thyme
Dash of dried dill weed
Dash of celery salt
Mix well.
For equivalent of 1 can cream of "chicken" soup combine and heat 1/3 cup dry mix
and 1- 1/4 cups soy milk.
For equivalent of 1 can cream of mushroom soup combine and heat 1/3 cup dry mix,
1- 1/4 cups soy milk, 2 ounces finely chopped mushroom pieces and 1 teaspoon salt.
For equivalent of 1 can cream of celery soup combine and heat 1/3 cup dry mix,
1- 1/4 cups soy milk and 1/8 cup celery flakes.

With 1 1/3 c. liquid I'm quite sure it means the contents of the can before preparing. I haven't used this recipe for quite a long time, but I remember you had over a cup of thick preparation in the tin and then you added like 2 cups of water. This is a base for adding to recipes that require just the thick stuff. The original had powdered milk in it, and you added water.
