Christmas Brunch
Yay!!! I talked my mom (it wasn't hard) out of doing a traditional Christmas dinner. Instead we're doing a brunch. If any of you are sharing a brunch-y meal with omnis, here's the menu I came up with. The only non-vegan thing is the casserole. All of the meat/eggs/dairy will be in one slightly obscured dish, which is tons better than looking at a turkey carcass.
Bread/Starch:
1. cinnamon rolls (and maybe coffee cake for my sister)
2. baked oatmeal (assembled a day ahead)
Fruit:
1. Waldorf salad (apple cubes, sliced celery, and toasted pecans mixed with Vegenaise)
Vegetable:
1. zucchini, steamed (can be nuked, if you're into microwaves) and sprinkled with Mrs. Dash (easy & delicious)
Omni Food:
1. all-in-one casserole
Beverages:
1. coffee drink (dark brewed coffee / barley coffee, sugar, almond milk, ice)

THANKS for posting! I just spoke to a friend who wanted to have a holiday brunch with me. I was wondering how I could create a hearty meal out a breakfast foods. I like your suggestions. I might add a tofu scramble to mine.
I think a tofu scramble sounds great! Back in the day, I loved tofu scrambles with diced tomato, chopped green pepper, diced onion, salt, pepper, and nooch. Yum! (Now I'm trying to be a good hypothyroid person and avoid soy.)
