Does anyone have a chocolate zucchini cake recipe that is lower in fat and does not contain nuts?

yes, in fact i do! i was actually just thinking of making it when i saw your post. so.. cool coincidence! mine is called zucchini nanny cake... i don't know why.
Preheat to 350, grease and oil an 11" pan
Shred 2 cups zucchini (3 smallish ones)
Blend: 1/2 cup canola 1/4 cup applebutter 1 1/2 cup sugar 1 tbsp vanilla 6 tbsp milk 1 tbsp vinegar (cider, rice or even lemon) 1 tsp orange zest
Mix wet ingredients and zucchini, add dry and mix well. Bake for 35-50 min and serve with a rasberry sauce (1/2 fresh rasp, 1/2 rasp jam, 1/4 cup applejuice... simmer)
In terms of healthiness... i automatically reduce sugar by a half cup (to 1 cup), use half and half whole wheat and white flour, and usually replace some of the oil with applesauce or similar. applebutter is a concentrated form of applesauce, so i don't know if i'd replace the canola oil in this case. also, i'm sure you could finagle the applebutter by cooking down regular applesauce, but it's not that hard to find in grocery stores. and if you've never had it, it's delicious to use on bread too so you'll have use for it outside this recipe.
