Bryanna Clark's Pecan Pie?
Has anyone made Bryanna Clark-Grogan's Pecan Pie? How'd it turn out? Any tips?
Vegan Pecan Pie
Ingredients
9” pie crust, unbaked
1-2 c. toasted, unsalted pecan halves
FILLING:
You have two choices for the sweetener:
1.) 1 ½ c. water + ¾ c. white sugar + ½ c. brown sugar (packed)
OR
2.) 1 ½ cups maple syrup + ¾ c. water
pinch salt
¼ c. cornstarch mixed with 4 and ½ T. cold water OR rum or bourbon
2 T. Earth Balance
1 tsp. pure vanilla extract
Directions
Preheat the oven to 400F.
Poke the pie crust all over with the tines of a fork and pre-bake (ater the heat hits 400F!) for 3 minutes. Remove from oven to a rack.
In a medium saucepan combine either 1st mixture for sweetner choice OR the 2nd choice mixture.
Bring to a boil and boil for 5 minutes. Add the salt and the dissolved cornstarch, whisking vigorously. Stir and cook over high heat just until the mixture thickens and is clear. Remove from heat and stir in the margarine and vanilla—stir until the margarine is melted. The mixture will still be fairly liquid.
Pour this into the pre-baked pie shell. Arrange the pecan halves on top, pressing them down into the mixture a little. Place the pie in the middle of the oven and immediately reduce the heat to 350 degrees F. Bake 30 minutes. The filling will still be “jiggly”—don’t worry; it will set as it cools. Cool on a rack for about 1 and 1/2 hours, then refrigerate until thoroughly cooled and set. Serve with vanilla Soy Delicious Ice Cream.
Sorry, no tips, but this looks yummy. I've never made pecan pie before. Imagine, a southern "girl" never having made pee-can pie!

Ummm.... YUM! Let us know how it turns out. I might make one for Christmas. Everyone in my family gets way too excited if I don't eat and this look super good.

It's really good! Definitely plan ahead so the pie can chill for a few hours. It set up very well and has a great texture.
If you go the bourbon route: Unless you *really like* and *somewhat frequently consume* bourbon, you may want to use half bourbon/ half water. I made it with 4 Tbs bourbon and 1/2 Tbs water, and really, it's stronger than I wanted. I just wanted a little flavor in the background, but this is... more festive. But, I'm not a drinker, so I'm pretty aware of the taste. It's still really good, though.

I was thinking about using all water and a little splash of bourbon (or instead of buying a whole bottle that will never get used again, a tad of rum extract?)
I'm going to make the pie the day before so that it has plenty of cooling time.
A splash of bourbon or a bit of rum extract would be great.
And it is a very good recipe... so thank you for asking about, b/c I probably wouldn't have made it otherwise.
I love baked goods that should be done the day before for best results.

Since this is my first time I'm baking/eating vegan for Thanksgiving, I feel an additional pressure to impress the omnis who think vegan food is all tofu and salads.

This one is really good. I'd make it for omnis to enjoy. Good luck with Thanksgiving, but I'm sure you'll pull it off!
wowee, this is really exciting. about a month ago i had a glance around at some pecan pie recipes, and they all had stuff like agar agar and iono soy lecithin, scary ingredients to me. this recipe will be made. by me. and consumed, entirely by me
Made this for Thanksgiving. We used the water and sugar option and it turned out great. Substituted rum for half of the water. Although this was very good, it seemed to be missing something. Next time I'll try the maple syrup and add extra pecans (used 2 cups). It's definitely worth making if you like pecan pie.
I also made this for Thanksgiving, using the sugar/water option. I did not use any bourbon. It turned out great! The inside is all syrupy and good. My omni family scarfed the whole thing. I definitely recommend toasting the pecans beforehand. It really brings out the flavors.
My mom made this on Thanksgiving and roasted the pecans and used maple praline syrup and no bourbon and it was the most rich, decadent thing I've eaten in years.
