I agreed to give a cooking demonstration in April on brunch recipes. 

Version 1.3 of the menu

Savory
Blue Corn Crusted Tempeh with Shiitake Mushroom Gravy (served hot)
roasted brussels sprouts (served at room temp)
Baked homestyle fries (served at room temp)

Sweet
Baked Oatmeal (served at room temp)
Broiled Grapefruit (served warm)
blueberry scones with lemon curd (served at room temp)

Super Sweet
crepes rolled with Biscoff spread and bananas, and drizzled with chocolate sauce (served at room temp)

Beverages
Pomegranate Prosecco, fruity sparkling water, iced minty black tea (served cold)

Question:
What's the average number of dishes served a brunch?

I was going to start with EnerG egg replacer or flax and if that didn't work, start tinkering with it.  Like, for the savory crepes especially (since they already have flavor), I'd imagine a blend of ground flax or chia seeds could work.

Ha.  It's not gourmet.  It's a group that teaches how to preserve food (canning, pickling, drying, freezing, etc.) and they subsidize their program by giving cooking demonstrations.  People who have been through the program volunteer to be demonstrators.  Seriously, some people make cake mix recipes.  Really?!  That's why my food tastes so good in comparison.

I thought the spinach crepes would make it easier for people to tell which ones are the healthy ones.

Great looking brunch menu.

Keep that blueberry scones recipe. It's so easy and delicious, and a pretty amazing combination of flavors if you use fresh raspberries instead of blueberries, and use the Maple Agave Syrup from Trader Joe's instead of pure agave.
