Breakfast strata recipe

hello!

I have done countless searches for a breakfast strata/casserole and just can't find one that is more traditional - a bread layer, a veggie layer, maybe some soy crumbles, and then a tofu/nutritional yeast mixture to pour over it and to "set" it all together, like a custard.    I found the lovely cranberry walnut one on this site and will try that sometime.  For now, I want something I can assemble the night before and then just throw in the oven in the morning, without worrying about it. 

I can sort of cobble something together and make some trials, but if anyone has any ideas about amounts and ingredients, I'd love the input.  For a 8x8 casserole that feeds 4-6, I was thinking of using 8-12 oz of silken tofu, maybe 1/4 c nutritional yeast, some dried mustard, maybe some vegan Worcestershire and some soy milk.  Not sure how much milk....maybe 1/2 to 3/4 cup?  Would I need to arrowroot or agar-agar to set it while it bakes?

Also, do you think this mixture will "penetrate" the bread with the flavors (to mimic what egg/milk does in a strata)?

what about looking at the quiche recipes? the mixture for the spinach and fakin bacon quiche on here might work for a strata, you may actually want to water it down a bit more to soak into the bread, if thats what you want it to do.

or check the scalloped potato recipes on here....it sounds like it might be along the lines of what you are lookingfor.

Duh!  I should have thought of quiche.
