Bob's Red Mill Vital Wheat Gluten

Whenever I use this stuff to make seitan, the seitan has this weird smell and aftertaste.  Sort of like....mold or bugs or something.....anyone know why? (Happens even if i use a brand new box)  (I don't think other seitan I've eaten gives that weird taste)  Anyone else get the same taste?  What's going on?

...but I don't think I would rinse wheat flour to get the gluten out (I know there are many threads on here about people who have though! Hopfrog had a good method) I'm just not into seitan enough for all that work!

I was one of those rinse-wheat-flour-to-get-the-gluten-out people, but only because I didn't know there was another way to make it. I had seen vital wheat gluten in boxes over the years but somehow I didn't relate it to what I made at Thanksgiving. (We would have The Farm Cookbook recipe for "Gluten Ribs," but we only had it once a year because the process of making the gluten was tedious and tiring.) HOWEVER, now that I have discovered that vital wheat gluten does make the same product, nevermore shall I go through the miserable routine of making it from scratch. The end result is not as tough, either. ::)

I suggest a baked seitan recipe. Like maybe drgaonfly's ribs. I think it's easier and turned out with better results baked. I'm gonna try the pepperoni seitan that's been going around from PPK and fatfreevegan... but of course since it's different i'm nervous. LOL

I don't keep mine in the fridge  but it's in the very back of a dark cool pantry.

OK, thanks to you, I just put my veggeroni from FatFree Vegan Kitchen in the oven.
Putting it together wasn't nearly as scary as I thought it was going to be, but I'm
still nervous about it's edibility! We just have to wait another hour and see how it tastes!  :)
