So, I just made "The best vegan mac and cheese in the entire world...seriously." http://vegweb.com/index.php?topic=8295
I'm a little wary to try something named "the best ever," but this got so many great reviews I gave it a shot. It's the only vegan mac and cheese I've ever had, so I don't have a comparison ;) but it was pretty freaking good!
I think I will introduce it to my omni friends as "Pasta with a creamy sauce" instead of vegan mac and cheese...you know? I could see them enjoying it that way, but if they tasted it with the expectation of cheese...eh, I don't know.
I'm really way too excited about this. ;D
Thanks guyzzzzzzz!! I've loved it for 3 meals now!
Tips:
-I definitely recommend using shells. I used vegetable pasta shells.
-I would probably add a little less than a tbs of both miso and tahini-maybe add more miso than tahini.
-Add a bit more soy sauce.
-Season with lots of pepper and salt.
-I like adding more soy milk to make it saucier/creamier.
-I think I would add more NY.
-More lemon.
haha; just ideas! :)
eta: I meant three meals from one batch! Three meals for 2. ;)b
eta2: I didn't bake it at all. Just made the sauce, and mixed it in with the pasta.
This is so unfair! It looks yummy!!
Make it! ;)b
You know, I think I just may! I am getting the ingredients on Thursday and then I am going to give it a shot :)
Yaaayyyyyyy! Are you going to make any modifications? You'll have to tell us all about it! :D
I also added a diced tomato the 2nd time around (warming leftovers)..when I made a few modifications, and they didn't really do anything.
This went over really well at work today! A few people asked for the recipe and I gladly pointed them towards vegweb. Two things, 1) I added jalepenos and onions for some extra flavor, which people said gave it a little different of a flavor. 2) It really does taste better the next day. Last night I had some right out of the oven and I was contemplating whether to bring it in at all. After a night in the refrigerator it was absolutely fantastic the next day!
