Bean Nacho Cheese Recipe

I saw the Garbanzo Bean Taco Recipe, and last night while at the movies, desperately trying to avoid eating nachos, I decided I needed to find a healthy recipe for Nacho Cheese. I am sure the stores sell some sort of soy nacho cheese, but sometimes I wonder about food processing even in that form and think it would be much better if I could make it fresh myself. So if anyone knows of an idea to make some nacho cheese sauce, or maybe even a paste out of regular beans of some sort, please tell me your ideas!!! ;D
We make this recipe for nachos all the time (I wouldn't call it healthy, but is cetainly not as bad as store-bought or real nacho cheese):

Mix it with some salsa, pour over chips, then add some beans, lettuce, and diced tomato. Oh yeah, and olives, I guess (I hate olives, so I forget that people like them). I use whole wheat flour instead of the white flour the recipe calls for, works just fine. Yummy!

Thanks, that is really amazing, not too sure about margerine tho, I have long stayed away from that and stuck with butter thanx to hydrogenated oils, but I will have to check out the vegan versions. It sounds like it will be really close to being the same. I am sure it will be just the thing I need to save myself when I go to the movies, everyone I go with gets nachos, I don't know how long I can handle it, now I will be able to make this!!! Yeah, not as good as staying away from it, but when that doesn't work! :)
Check out Earth Balance margarine, it has no hydrogenated oils. We don't eat anything with hydrogenated fats either. :)

I love my quasi queso variation the best. That reminds me, I am hungry, I'll go whip up a batch. I don't mess with chips, just give me a spoon!
So that is a recipe for a cheese dip with nuts??? Very cool, I will have to try that. I am hoping to stay away from foods processed in any way when I want to eat things that are usually bad for me, so I like the idea of having an option that doesn't call for processed products even if they are vegan, which is a darn good option also. I am so glad I don't have to cave into to mass produced processed products in the very least :)
Just think, your nachos become a dip into healthy nut oils and B vitamins. Add beans, whole grain corn chips and tomato salsa to the cheez and you have something so disgustingly healthy, you'll have to eat it for dinner, not a snack!
