Attention Connecticut Vegans: The Bridge Tofu
If you live in Connecticut or anywhere close enough where you can easily drive here there's something you should know about. There is a small company in Middletown called The Bridge that produces traditional hand made tofu. Their site is here:
Their tofu is available at CT Whole Foods Markets, Garden of Light in Glastonbury and It's Only Natural Market in Middletown. It may be available in other places as well but these are the three I know of and they are all near where I live so I haven't investigated further.
It is priced about the same as the national brands, a little over $2 a block. That's where the resemblance ends. This tofu is extremely dense and has a slightly cheesy aroma. There is never a need to press water out of it because it doesn't soak it up like the other spongy brands. I was told that this is because they use far more soy per block with Bridge tofu.
The flavor and texture of this tofu is the best I have encountered. While most tofu is rather bland and tasteless on its own this stuff has a slightly cheesy, vaguely nutty taste. All you have to do is give it a quick rinse and it's ready to use. I frequently use it to make a "ricotta" like filler for homemade ravioli or calzones. It is delicious fried or baked, or in any of your tofu recipes.
The only time my wife and I buy anything different is if we need a soft or silken type tofu. The Bridge tofu is way too dense for most recipes calling for something soft. You can soften it up in a food processor adding different liquids (soy milk, oil, etc.) or just use one of the other brands.
I hate to sound like an advertisement but this stuff is way too good not to tell people about.

Can buy it throughout the Northeast and in Massachusetts too. I buy it in bulk at the co-op in Albany. In fact, my blog post today featured their tofu. It's my favorite.
