I just picked up my copy of Vegan Cupcakes Take Over the World! I'm so excited... what should I try first?

Now you can use a hand held mixer, with the removable beaters. Just be aware that its going to take a while. If you are making these by hand, well, I am not sure if they can get enough air before your arm tires out, hehe. I know my arm would!
when I made the basic buttercream frosting, i just used my hand held mixer with removable beaters. it was easy, actually, and shortened the time I needed to get the icing nice and fluffy. I was a little surprised how quickly it went.
I would never bother trying to mix with my arms. that would take FOREVER.

When making vanilla cupcakes the color changes from a yellowy white to a pale white. Thats when its fluffy enough.
Yeah! When I made the Chocolate Buttercream Frosting, I was surprised at how much the color lightened! It went from deep, dark brown to light brown (almost like a mauve-ish color) really quickly. And it was a lot fluffier than I imagined. :D

how come u guys all make really good/professional looking frostings and i can't make made-from-scratch frosting to save my life? i always have to use the kind in the jar.... i did make the peanut butter frosting on here (with the help of my BF) during the summer and that came out good but it still looked like just peanut butter. not all fluffy like yours... :-[
yeah! Share your secrets, fiends! I hate frosting really...I think it's too sweet and overpowering, but I want my cupcakes to be pretty like that
I didn't do anything special for my frosting. I just followed the recipe in VCTOTW. I do not have a Kitchen-Aid or electric beaters, so I just mixed them a lot using a spoon or a fork (can't remember which). They still came out, and I didn't have to mix them insanely long. I think there is SO much sugar/cocoa in proportion to the butter/shortening that it is extra stiff.

so I baked the cookies 'n cream cupcakes for a bake sale today. they were so good - and were gone super fast! I think they were the only things to sell out (they were definitely the only vegan treats there). people (vegans and non-vegans) loved them. woo hoo!
I can't figure out how to put the photos here, and they're apparently too large to attach. poo poo. they looked pretty good. oh well.

there aren't a lot of recipes with tofu, are there?
i'm still afraid to try tofu... it just looks... icky.. to me

Yay for Cookies & Cream cupcakes! I need to branch away from the basics and try something fun.
I believe there is no tofu in any of the cupcake recipes. There may be some in the frosting but I dont believe so. Plus when making desserts any tofu added is blended to a liquid consistency and thus it no long is 'icky' in looks, just looks like a thick soy shake. I would not recommend sipping it though! haha

I put the cookies in the batter too, and it added something pretty neat - it was a great touch! I wouldn't opt out of putting them in the batter. so yummy.

nah, I shared with the world that they were vegan. personally, I appreciate when things are labeled - that way I don't have to ask: "uh, what here's vegan?" I figured any other vegans around (I think there was one) would really appreciate that too.
but I did gloat to the other bakers. my vegan cupcakes sold out when theirs didn't ;)

I just finished a batch of the Pineapple Right Side Up cupcakes for my friends and me to munch on tonight. Fortuitously, there was a bottle of Malibu staring me down in the kitchen, so I drank added a few shots splashes to the crushed pineapple topping to make Piña Coloda cupcakes! I also garnished them each with a raspberry like Isa recommended. I don't really think raspberries go with it, but they needed some color. Next time I will add shredded coconut instead, I think. Or a piece of fresh pineapple.
Very good and easy! You just plop the topping on with a spoon. No messing piping. And the only "special" ingredient is a can of crushed pineapple.

Everyone reading this thread needs to stop what they are doing and make the BANANA SPLIT CUPCAKES.
They are the best thing EVER, and I have tried 80% of the cupcakes in that book (including all the variations)

I'm thinking of making some hazelnut mocha again this week.. once we finish off the delicious Oh Sweet Mama's cupcakes we bought on a whim the other day.. damn you half off sales!!

I have had my eye on those Hazelnut ones for a while and haven't gotten the nerve to go out and get hazelnuts so I can grind them into 'meal' for the recipe. Are they really, really good?
Also, your coconut lime cupcakes look incredible! I made those for a picnic birthday party for my friend and she loved them. They didn't look as nice as yours, if I remember correctly.

aw thanks, well I should admit that the cocolime batch has some dense, somewhat oily frosting since I ran out of powdered sugar...the lighting was kind to them, and covered in coconut, they look better. They're still pretty good.. I made a huge double batch for a class I had and now I have to resist eating the 5 or 6 I have left in the fridge.
and yes, the hazelnut ones are insanely good.. I have an inappropriate attachment to them. Like big, spongy Ferrero Rocher balls.
