I just picked up my copy of Vegan Cupcakes Take Over the World! I'm so excited... what should I try first?

I second what ponycakes said. They are definitely one of my absolute faves from the book!
I forgot to mention that since I used fresh blueberries that I froze myself, resulting in no thawed blueberry liquid (as stated in the recipe), I added 1/2 cup pomegranate juice to the compote. It was just the right touch!

Last week I made the orange pudding filled orange cupcakes with the chocolate ganache topping.
They were delicious and tasted even better the day after making them (storing them in the fridge). However, they have a very adult sharp orange taste and my kids, who normally like orange flavored cakes, did not like these. I would also say that there was noticably extra time involved in these--grating and squeezing the oranges (I used three in all), plus making the pudding and filling the cupcakes. It wasn't horrific, but these aren't cupcakes that you should try in a pinch or if you're tired.

The pineapple right-side-up recipe says something about keeping them in the fridge until you're ready to eat them. I was thinking about making them for a bridal shower at work, but won't be able to refrigerate them there.
Can anyone who's made the pineapple testify to whether they can sit out at room temp for about 6 hours and will still be/look good?

they'll be fine. i baked mine one night then did the topping the day of, served them later that day and didn't refrigerate them at all between cus there was no room in our fridge. the few leftovers actually sat out another day or so before i put them in the fridge and they tasted fine/didn't kill anyone.

I don't have my book with me now, but I was thinking of doing the Black Forest variation with the cherry brandy (assumming I can find some) But I was wondering if they would get soggy if I make them a day ahead of time (because of the filling)? Does anyone know about this?

I've made those and the lemon blueberry (with the same filling concept) and always made them the day before, I've refrigerated them overnight or left them at room temp, and both times they were fine the next day.

i havent made them but i've seen bobs red mill brand of almond meal at my local grocery store.. it's more of a b-otch to pay for.. like 10 bucks for a small bag.

Sorry, I haven't made those yet. I buy my almond meal at Trader Joes, though, if you have access to them. I know it was nowhere near $10, maybe $3.

couldnt you just like..throw some almonds in the food processor until theyre super finely ground? i remember doing that for some ones that called for hazelnut meal or something..but my memory is really bad so maybe it wasnt hazelnuts..

Yeah, I';ve tried this and it takes FOREVER to work! I bought some bob's red mill hazelnut meal for the mocha hazelnut cupcakes and for some hazelnut scones (delicious!), but I don't think I've ever seen almond meal.I will have to look harder I guess. I didn't even think the check Trader Joe's!

I was super stoked to try those, but they didn't really work out as well as I had hoped... kind of dry. Next time I'll definitely concoct some sort of frosting for them instead of using the dry topping the book calls for

oooh def make stout icing for on top! I think i used the basic buttercream frosting, but instead of soymilk, just added some beer!

I tried my first recipe tonight, the basic choc ones with choc buttercream icing. DH loved them, the rest are going into work so I don't eat them! Pics to come, they were plain, but pretty!

i made the toasted coconut cupcakes with coffee buttercream into a mini cake for my birfday. there was some extra batter so i made a few mini cupcakes. very tasty (:

Aw, thanks! :biggrin: I use a really big numbered tip that doesn't have the scallops on it. I'm really looking forward to making more, even though only three were eaten at work (what's up with that, there are a bunch of hungry grad students that know I can bake). They even said that they tasted different so they they could tell they were vegan, still good, but vegan. My ass! You cannot tell those cupcakes were different than any other chocolate cake. (And close rant.)
