I recently made the vanilla gluten freedom cupcakes with lemon buttercream and toasted coconut, and they turned out delicious. I used whole grain flours and didn't detect a "healthy" taste at all. My picky husband couldn't tell they were GF.

Has anyone tried making any of these as mini-cupcakes? I'm trying to think of something for a potluck lunch at work, and wanted to go the vegan baking route. Regular cupcakes might be too much but mini cupcakes would be perfect. Was wondering if a particular recipe worked well for this and if so, how long to bake them for.
Was thinking of doign the chocolate stout ones, not a filled one obviously.

I made mini cupcakes for a school function last year. I think I just made the regular vanilla ones. They turned out well. I'm not sure how long I baked them...probably just a little less time than the regular ones.

i made mini chocolate stouts - i think i baked them for around 15 minutes but check em with a toothpick for doneness.

Has anyone had success with the Not-too-sweet Blueberry Mousse? Mine starting separating soon after piping it - putting it in the fridge didn't seem to help, either... :-\
