Lentil Shepherd Pie
4 medium potatoes, chopped
olive oil, as needed
1 medium sized yellow onion, chopped
1/2 cup celery, sliced
2 garlic cloves, chopped
2 cups cooked lentils
8 ounces tomato sauce
2 tablespoons nutritional yeast
basil, to taste
oregano, to taste
parsley, to taste
1. Preheat oven to 350 degrees F. Boil potatoes until tender. Saute onion, celery, and garlic in a little olive oil.
2. Add lentils and tomato sauce and cook 15 minutes. Mash potatoes. Pour lentil mixture into a baking pan and cover with mashed potatoes.
3. Sprinkle nutritional yeast on top of potatoes. Top with spices. Delicious!
