Instead of doing the chocolate ganache, I did the chocolate buttercream frosting because I already had all the ingredients. Then I topped them with chopped peanuts and a chocolate-covered peanut on top.
These were so delicious. The batter was absolutely divine. :) I think it's the molasses that does it.
YUMMMM those look good. You make me wanna make them, though that would mean I would eat them, so I better not. I wasn't crazy about the chocolate ganache in VCTOW. I've been using the Chocolate Glaze recipe here on vegweb, along with the VCTOW vanilla buttercream frosting for everything. (Haven't tried the chocolate buttercream yet). I bet your cupcakes were gooooood!!!! So cute and creative!

Well, unfortunately, my friends and I may have eaten....the entire batch....in one sitting...... ::) (Granted, it was a half-batch and they were mini. Which, of course, means you can eat more.)
I was really impressed with the frosting! When I saw the pictures with the fancy, swirly frosting I thought, "Pshhhhh, they never actually turn out that way!" In my experience with piping frosting onto things (pre-vegan), the frosting always gets all goopy as my hands warm it up, and it ruins the cupcakes. Not the case with this frosting! Goes to show that vegan cupcakes are superior. ;D

Oh yes, the frosting is the best part! It is so easy to make it look awesome with a bag and star tip. I have had people boggle at my cuppers asking how I did that fancy swirl. So much fun.

how come u guys all make really good/professional looking frostings and i can't make made-from-scratch frosting to save my life? i always have to use the kind in the jar.... i did make the peanut butter frosting on here (with the help of my BF) during the summer and that came out good but it still looked like just peanut butter. not all fluffy like yours... :-[

seriously, my frosting always looks like a gigantic blob on top of an uneven cupcakey mess. They taste great though... and THEY ALL COME OUT THE SAME COLOR IN THE END ANYWAY

I made cupcakes today! basic vanilla with buttercream frosting. they're not as fancy as the ones in the book, or the ones posted on this thread, but they're my first try. I think I did a pretty good job for my first try. :agree?:

Those are super-cute, laura! :D Personally, I really like cupcakes that don't look "fancy." I think "rustic"-looking cupcakes are adorable; when you can tell they're homemade, but they still look clean & nice!

Aaaaaand speaking of "rustic cupcakes," here are the Carrot Cake Cupcakes with Cream Cheese Frosting from VCTOTW:
They're not very "pretty," but I think they're cute!
As you might see from the bottom picture, there are only 11 cupcakes instead of the 12 I made... Well, I had to taste one for "quality control," and wow--they're amazing! I even had my dad taste the frosting before putting them on the cupcakes (they're for his birthday tomorrow), and he said he would never know it wasn't made with real cream cheese! :D Which is great news because I really dislike Tofutti on its own, but used in a frosting--wow!
For the cakes, I added nutmeg, ground cloves, and allspice & about tripled the amount of cinnamon (I always do this for spice cakes), and yummmmmm! I already can't wait for another one tomorrow!

I didn't test any of my cupcakes (they smell wonderful, though)... but I did eat a lot of the batter - very sweet. I liked it, but it was very sweet.
yay for cupcakes - I can't wait to try the more interesting ones --> cookies n' cream, here I come!

I saw this book in Border's tonight and wished I could afford it because every cupcake looked so delicious and simple to make. Your photos only make them look better! As soon as I have some cash I'm going to treat myself to this book - and I'll share my results too!

i think the trick for awesome icing is to whip the butter and/or shortening REALLY well...start it at room temp too, then add sugar slowly. that way, its nice and fluffy

I made the Peanut Butter Cupcakes and topped them with Chocolate Buttercream Frosting, and they were aaaaa-may-zing! :o I think my favorite so far. I figured the fat in the peanut butter would be enough, so I replaced all of the oil (except about 2 tsp.) with applesauce, and they were still super-moist & delicious! Yum yum yum! A hit with my co-workers, too. :D

Over break I made the Earl Grey version of the Chai Latte cupcakes and they were really good. (too sweet for my tastes though). I also made Carrot Cake Cupcake with the pulp that gets left over after making carrot juice, and it turned out not tasting like carrots (i've never had carrot cake before). This one was also too sweet to my tastes, but i loved it when i made a second batch with 1/2 the sugar! The carrot pulp acted kinda like applesauce-egg though... Today i made Vanilla & Chocolate Marble and it turned out tasting like marzipan :P The only difficult part was the dual-spoonage. I'm going to make a batch of cupcakes from VCTOTW every week :)

My trick to light and fluffy icing is my kitchenaid mixer. I let the EB Buttery Sticks & EB Shortening sit in the metal bowl for an hour or two to warm to room temperature. Then I use the whisk attachment and beat it until well blended. Add in the sugar a bit at a time and then the soy milk, extracts, what have you. Then, I set it on medium speed and let it beat for 3-5 minutes. When making vanilla cupcakes the color changes from a yellowy white to a pale white. Thats when its fluffy enough.
Now you can use a hand held mixer, with the removable beaters. Just be aware that its going to take a while. If you are making these by hand, well, I am not sure if they can get enough air before your arm tires out, hehe. I know my arm would!
I think that I am going to make lemon cupcakes today, with lemon icing. I know I should branch out, but honestly, I love love love lemon cupcakes. hahah
