Made these with soaked and pureed dates instead of sugar. I think that the sticky dates and some added "flax eggs" helped bind everything together a bit better.
I mashed some of the tofu and cut the rest into tiny cubes (I remember egg salad sandwiches being pretty chunky). Oh, and I added a tablespoon of relish.

I don't have a dehydrator yet, so I baked these in the oven. They didn't get quite crisp enough (they turned out more like pita bread), but they are still flavorful.
