Zucchine and Tomato Curry

What you need: 

1 medium onion, sliced into thin rings
1 large zucchini or 2 medium, sliced about 1/2 thick
1 large can of peeled tomatoes or 3 or 4 medium ripe tomatoes,ripped into quarters
1 1/2 tablespoon yellow curry
a few leaves chopped basil
salt and pepper to taste
1 tablespoon extra virgin olive oil

What you do: 

With the heat on about medium, saute the onion in a large frying pan or wok with the olive oil until it is a light caramel color. Add in the zucchini and saute until the zucchini is cooked. Add the tomatoes, curry and basil. Let simmer for about 10 minutes. Serve with rice.

SO HOW'D IT GO?

Absolutely fantastic! I didn't use basil, and I used coconut oil instead of olive oil, and I added yellow, green, and orange pepper with the onion. Lots of curry powder, but I could have used more (I love me some curry :) ). I also toasted some bread, and put this into a sandwich, rather than on rice. Soooooo good! and super easy to make

this is the first indian recipe which really worked out great for me.
it´s cheap, healthy and super super tasty. it became a dish i make at least once a week.
instead of serving rice, i serve it with ebly wheat and it tastes wonderfull  :>

Simple but tasty!  I was so annoyed that all I had in my kitchen was a zucchini and a tomato and was wondering 'What on earth can I make with this?'  It was great.  Very fresh tasting and light.  I'd make it again!
