Vegan Banana Pancakes

What you need: 

1 cup flour
1 tablespoon brown sugar
1 teaspoon baking powder
1/4 teaspoon salt
dash cinnamon
2/3 cup nondairy milk (I use soy)
1/2 banana, very ripe and mashed
1 teaspoon vanilla

What you do: 

1. Mix flour, vegan sugar, baking powder, salt and cinnamon together.
2. In another bowl, combine all other ingredients. Add wet ingredients to dry ingredients and stir well. Add more milk if batter is too thick.
3. Cook on medium-high heat in skillet until browned on both sides.
Serve with maple syrup, icing sugar or jam.

SO HOW'D IT GO?

easy and delicious. Added a few blueberries to the mix and it was so fluffy and perfect.  I had to a more soy milk, a lot actually but it's all good ;)  Cook this stuff with earth balance and you are in for a treat!

made these with brown rice flour, a whole really ripe banana, and honey instead of sugar - turned out awesome!!

Dang.  Real tasty.  Perfect treat for my craving.  I think next time I'll add some chopped pecans/chocolate chips they would make these pancakes THAT much better.  Or peanut butter chips?  Great recipe for altering.

i was looking for a pumpkin waffle recipe when i saw shan2u's review on the homepage.  i used half a can of pumpkin instead of the banana, whole wheat pastry flour, a bunch of extra spices and no extra soymilk - it was perfect waffle batter!  i really love that it is an oil free recipe and super low in sugar.  even though the pumpkins not as sweet as banana they were still really tasty and i like to put syrup on top anyway.  (i got 4 waffles out of this.)

The kid's gobbled these down.  I used ww graham flour, extra soy milk, pumpkin instead of ban, pumpkin spice and a dash of flax!  They were asking for more before the second batch was done!!

can i substitute water for the milk and these turn out ok????

Soo easy to whip up on a Saturday morning, or any other morning...  This is in my repertoire!

loved this easy recipe. it's not a huge amount of pancakes, so i didn't feel stuffed after eating. i used more soy milk (1 tbl), more banana (another half of one), more cinnamon-sugar (i always use already married cinnamon-sugar they sell almost everywhere)...

These were awesome!!!! I used all Whole Wheat Pastry Flour & ended up with 6 (used a 1/4cp scoop).

Weight Watchers = 1.5Pts each, if making 6 and using all whole wheat pastry flour...WOOHOO!!!!

:)>>> i looove this recipe!  I was skeptical this recipe could hold up any strength against my old non-veg standard recipe, but it was great!  Fluffy and delicious!  I used a scant cup of whole wheat flour too! and i added an extra 1/2 tsp of baking powder, threw in a big handful of choc chips.  I was VERY careful not to mix it too much, since my pancakes nearly always come out rubbery.  The pancakes were sooo yummy once i got the hang of cooking them right, cooked through and were very nice and fluffy and super healthy since i used all whole wheat flour.  I did have to use more milk than called for, maybe 1/8-1/4 cup more.  I highly reccomend this recipe and will make these again! maybe with some oats or walnuts....
