Banana Spelt Pancakes
2 cups (1 pint) light spelt flour
2 tablespoons (1 ounce) baking powder
1/2 (pinch) teaspoon salt
2 cups (1 pint) nut milk, rice milk or soy milk
maple syrup to sweeten
1 mashed banana
oil or non-hydrogenated vegan margarine for cooking
Mix dry ingredients. In a small bowl, mix wet ingredients with mashed or pureed banana. Add some silken tofu if desired, and reduce 'milk' a bit. Preheat pan until a drop of water 'dances' on it. Gently mix dry and wet ingredients. Spoon batter on to griddle or pan, size to taste. Spread a bit to avoid an undercooked centre. Flip when top is thoroughly bubbled. Eat right away!
Tastes like banana bread, does not need any toppings, especially if you are a bit generous with the maple syrup.
My son loved this and he is soooo fussy. Don't turn the pan up too high, no hurry....:)
SO HOW'D IT GO?
I really enjoyed these cakes, but had a hard time cooking them through. I really like ooey gooey texture so it was great for me, but my guests didn't like it.
These were really good. I was running low on syrup so I put in about 1/4 c. organic sugar instead. Yum!
