Vegan Banana Pancakes
What you need:
1 cup flour
1 tablespoon brown sugar
1 teaspoon baking powder
1/4 teaspoon salt
dash cinnamon
2/3 cup nondairy milk (I use soy)
1/2 banana, very ripe and mashed
1 teaspoon vanilla
What you do:
1. Mix flour, vegan sugar, baking powder, salt and cinnamon together.
2. In another bowl, combine all other ingredients. Add wet ingredients to dry ingredients and stir well. Add more milk if batter is too thick.
3. Cook on medium-high heat in skillet until browned on both sides.
Serve with maple syrup, icing sugar or jam.

the key to success with vegan pancakes is not to overmix them. this somehow harms the flour and the gluten in it.

I added some nutmeg, increased the amount of baking soda and soy.. I think next time a bit of juice from an orange would compliment the recipe well.. Goes great with strawberries!
These were mmmm mmmm good! I topped them with sliced bananas, pecan halves, Smart Balance Light, and maple syrup. I liked them a lot because they weren't sickly sweet or anything - just perfect! Thanks!!
I made these this morning for the partner and I and was very amazed at how light they were. I have made a lot of pancake recipes and have been let down by flat, gummy and just simply not attractive rubbery results. I can never follow a recipe...I always have to "personalize" it a bit. For this recipe I increased the amounts a bit as I wanted a nice filling breakfast. I used 3/4 AP flour and 3/4 wholemeal flour, increased the baking powder to 3 tsp., one large banana mashed to liquid, a splash of almond extract and a sprinkling of flax meal to the flour mix. They came out nice and fluffy (as a pancake should be). This is a great basic recipe that can easily be modified to suit your personal tastes. I think next time I will add some carob chips or chopped up brazil nuts. Next time I make these I will be sure to snap a photo to post.

these were DIVINE! I used soy milk powder + water since the milk is very expensive here. and you have to use a lot more than just a dash of cinnamon. some banana pieces on the cooked pancakes are a must. would probably taste great with cranberry jam. wish I had it.. =S
These were wonderful! I made them for my sister and I and they were quick and tasted great. I definitely reccomend this recipe!
so i tried to make these pancakes twice. i couldn't get them to cook in the centre. they were all doughy and gooky. i tried to thin them out with lots of soy milk and everything and nothing would work. my friends and i couldn't figure it out. what went wrong? any ideas?
