Speculaas Cookies

What you need:

Speculaas Spice
4 teaspoons ground cinnamon
1 teaspoon ground cloves
1 teaspoon ground mace
1/5 teaspoon ground anise seeds
1/5 teaspoon ground cardamom
1/5 teaspoon ground coriander seeds
1/3 teaspoon ground ginger
1/5 teaspoon grated nutmeg
1/5 teaspoon ground white pepper Speculaas Cookies
2 cups flour
1 cup sugar
1 tablespoon baking powder
1 tablespoon speculaas spice
1/2 cup vegan margarine
4 teaspoons nondairy milk
1 tablespoon flax seed powder

What you do:

1. In a bowl, combine the flour, sugar, baking powder, and speculaas spice. Add the margarine and thoroughly mix in with your hands. Add the nondairy milk and flax powder. Refrigerate dough for 1 hour.
3. Transfer the dough to parchment paper on a countertop. Place another piece of parchment paper on top of the dough. Roll the dough to be no thicker than 3 mm or 1/10 inch. Using a speculaas mold or cookie cutter, cut out dough and transfer to a parchment paper-lined baking sheet.
4. Bake at 350 degrees Fahrenheit or 180 degrees Celcius for 10 minutes. We enjoy these cookies when the time of SinterKlaas comes in The Netherlands.

SO HOW'D IT GO?

Thank you sooo much! I have long wanted a veg*n version of this recipe! It's much lower-fat than the omni version I had too, which starts with 6 eggs and half a pound of butter (ugh!!)
