Healthy Banana Cookies

What you need: 

3 ripe bananas
2 cups rolled oats
1 cup dates, pitted and chopped
1/3 cup vegetable oil
1 teaspoon vanilla extract

What you do: 

Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, mash the bananas. Stir in oats, dates, oil, and vanilla. Mix well, and allow to sit for 15 minutes.
Drop by teaspoonfuls onto an ungreased cookie sheet.
Bake for 20 minutes in the preheated oven, or until lightly brown.

SO HOW'D IT GO?

it didn't come out well. It was more like mini trail mix pieces. Don't know what happened. Used same ingredients ! :-(

This was VERY good.. I had 4 small bananas I needed to use. I thought with no flour it would be gooey.. I had no dates so I used raisins and nuts to equal the 1 cup. Mine did not spread out, they are like little mini muffins..Thank you I will definately make these again.

I tried this recipe today and I loved it. The baking time was about 15 minutes in my oven. I let the cookies rest on the pan about 5 minutes before removing them to a baking rack to finish cooling.
I did not have vanilla but they came out fine notheless. I also added about 1/2 to 1tsp of chinese 5 spice powder. It went very well with the bananas.
I am going to try a new batch with dried cranberries and candies ginger in place of the dates.

This recipe looks similiar to the recipe for lace cookies on this site.  From experience, I did not use oil for those cookies because the oil from the banana was sufficient. While I have not tried this recipe yet, I don't want to be critical of it butperhaps if others want to cut out the oil to reduce the fat, I don't see why it wouldn't be possible. Add oil last to the mixture to see if the mixture needs any moisture with which to bind. As I have made those cookies weekly last summer, I am sure this recipe is no different!
