Spectacular Simple Stuffed Mushrooms

What you need: 

3 pounds (48 ounces) mushrooms
1 onion
2 cloves garlic
vegetable oil, as needed
breadcrumbs, as needed
dash parsley
salt and pepper, to taste

What you do: 

1. Clean mushrooms and pull out stems, but save for later. Preheat oven to 400 degrees F, and lightly oil a cookie sheet.
2. Place mushrooms on prepared sheet. Use a food processor to chop onion, mushroom stems, and garlic.
3. Take that mixture and brown in an oiled frying pan. When done, remove from heat and cool.
4. Stir in vegan breadcrumbs, parsley, salt, and pepper. Fill mushrooms (not overfilled past the top) with stuffing, spray lightly with vegetable oil.
5. Put in oven for 15 to 20 minutes or until browned lightly on top.

SO HOW'D IT GO?

Delicious! I made them today for the first time and brought them to my Blackjack-Class. The Students loved it so I do have to make it again soon :)

These are in the oven as i type and they smell delicious.
I bought a vegan cheese spread and put that in first and then the bread crumb topping on top of that. I'm so ready for these to be done!  :)>>>

these were fantastic! I made them completely as is (just reduced the portion size for my and my boyfriend  :) ) simple and delicious!

These were really easy. I used crushed seasoned rye crackers instead of bread crumbs and then used a basil, tomato, garlic seasoning. Yum :)

Wow these really were spectacular! I need to stop eating them or there won't be any left for dinner....

For the filling I used basil instead of parsley and added in celery. I also added a little nooch. These little guys present themselves very well, but are actually quite easy to make.
