Smoky White Bean Quesadillas

What you need: 

1 cup white beans, rinsed and drained
1/2 cup tomatoes, chopped
1/3 cup nutritional yeast
few drops liquid smoke
garlic powder, to taste
1/2 teaspoon salt
pepper or cayenne pepper, to taste
4 whole wheat tortillas
cilantro, to garnish
salsa, to garnish

What you do: 

1. Blend together the white beans and tomatoes until very smooth. Add nutritional yeast, liquid smoke, garlic powder, salt and pepper. Blend again until well combined and smooth.
2. Heat a dry nonstick skillet over medium-high heat. Put a tortilla into skillet, and spread 1/2 the bean mixture on the tortilla, then top with another tortilla.
3. Cook over medium heat until crisp on one side, then flip and repeat on the other side.
4. Once it is cooked and the bean mixture is warm and gooey, remove from pan, slice into 6-8 wedges. Repeat with the other tortillas. Serve with cilantro and/or salsa.
Source of recipe: I came up with this recipe with the last little bits of things in the fridge and the last 1/3 cup nutritional yeast!

I LOVE THIS, so good and very easy.  I added a lil cumin and chipotle chili powder, topped it with spinach and fried peppers and onions.This will be a staple for me .  I made fried plantinos with mojo and guacamole.  Thank you for sharing.    :)>>>

;)b These have become a staple for me! My bf loves them too.  I made them exactly according to the recipe the first time (except no liquid smoke) but have made them approximately 900 times since then, always adding something (or lacking something).  I even made them once with beans from a "12 bean soup" mix that I soaked and then slow cooked and then pureed.  They're great with extra tomatoes, mushrooms, spinach, peppers, onions, etc.  I honestly think I make them once a week, they're better than any pre-vegan quesadilla I'd ever had.

This was a huge hit. My husband (who's not a vegan) was skeptical that this would be an acceptable version of a quesadilla. He LOVED it! I used black eyed peas for my white "beans" and it tasted perfect with this recipe. I added extra liquid smoke because I love smokey flavors. I also added paprika and extra nutritonal yeast. I topped this with guacamole and lots of cilantro...I also added a bunch of spinach to my quesadillas. I will definitely be making this a regular staple! Its so cheap and easy to make too!

This recipe keeps my 2 year old alive. He won't eat much else, but asks for this daily (just the sauce to dip in chips or pretzels). He will dip anything in it!!! Thank you THank you Thank yoU!!!!

:)>>> WOW! My boyfriend and I just finished eating these and it is 10 P.M. we made them last minute after a long day of painting our living room. They were easy and super quick to make and soooo delicious. They were my boyfriend's first cheese free quesadillas and he is a quesadilla fanatic, and he really loved them. I added fresh garlic cloves, and most of a can of Muir Glen fire roasted tomatoes with chipotle peppers. We will be making these again very soon!

Fabulous. I loved this recipe! I added green onion, yellow peppers and spinach to the quesadillas before cooking. We had a salad on the side. It was gobbled up quickly by my family. This is something I will be making quite often. And next time, I must make guacamole to go along with them.
