Chicken Quesadillas

What you need: 

1/3 to 1/2 cup vegan cheese, shredded (I use Follow Your Heart Nacho style cheese)
2 whole wheat tortillas
5-7 prepared vegan chicken style nuggets, chopped
1 1/2 tablespoons canola oil, optional

What you do: 

1. Spread cheese in even layer on tortilla, top with chicken nuggets, then other tortilla. Follow one of the below cooking methods.
2. You can fry both sides until golden brown with the oil, or
3. Microwave quesadillas for 1 1/2 minutes. Cut into pieces like pizza and enjoy!

Simple and easy to make. All the ingredients are items I keep in stock. I added some Bean Dip to give it the extra flavor. Meal takes a few minutes and a microwave. This is an easy meal for someone on the go
