Oatmeal + Choc-Chip Cookies

What you need: 

1/2 cup vegan margarine
1/2 cup applesauce
1/2 cup white sugar
1/2 cup brown sugar
1 ripe mashed banana
2-3 teaspoons vanilla
1 3/4 cup flour
1 teaspoon baking powder
2 1/2 cups rolled oats
1/2 cup vegan chocolate chips

What you do: 

1. Preheat oven to 375 degrees F. Mix margarine, applesauce and both vegan sugars.
2. Add well-mashed banana and vanilla. Add dry ingredients bit by bit while continuing to mix.
3. Scoop little spoonfuls onto greased cookie sheet. Bake for 8-9 minutes, more for larger cookies.

I was dying for chocolate chip oatmeal cookies and came across this recipe. Then I realized I didn't have chocolate chips so I made them with raisins and walnuts and added cinnamon. They were absolutely delicious! Thanks for the recipe!
I think I'm going to try subbing the margarine with more applesauce and a little oil as was suggested because I try to stay away from trans fat. Thanks for the suggestion. I cannot wait to feed these to my omni-family!

Good, but more of a ... light... almost breakfast cookie. A bit cakey rather than cookie-like. Good with a cup of coffee or chai.

In all fairness, I did modify the recipe by subbing part of the flour with wheat germ, using more applesauce and less butter (which may account for the more mild taste), no chocolate chips, and using nutmeg.

Ooo...very cakey tasting...I replaced the choco chips with Craisins, and they are like mini cakes  :D

hey babysgotssauce, i would assume you could just add in more applesauce and then a small amount of oil, just because most baked goods profit from at least a little bit of fat..but i'll probably make these soon, so i'll try it and let you know when i do!

I think Earth Balance makes a spread somewhere in their lineup that doesn't have soy. :\

A healthier alternative to chocolate chip cookies - with all the chocolatey goodness! Super easy to make too! They're in the oven right now and smell DELICIOUS!!

these were great!! i made them with a blend of whole wheat pastry flour and stone ground whole wheat  flour instead of white, and i subbed 1/2 cup agave and 1/4 cup brown sugar instead of 1/3 cup each of brown and white sugar. with these healthy improvements, they were delicious and more guilt-free!!
