Almond-Coconut Oatmeal Cookies

What you need: 

1 1/4 cup rolled oats
1/2 whole wheat flour
1/2 teaspoon salt
1/2 cup dried coconut shreds
1/3 cup raisins
2 tablespoon corn oil
3/4 cup mashed apple (peeled)
1/4 margarine ()
1/2 teaspoon vanilla
1/3 cup toasted ground almonds
4 tablespoon maple syrup

What you do: 

Mix dry ingredients and set aside. Then blend apple and maple syrup till it forms a nice smooth mushy mass. Add butter. Add liquid to dry mixture and mix to form a homogeneous whole. Scoop spoonfuls onto lightly greased baking sheet or non-stick flat pans (e.g. pizza pan) and flatten to a 1/4 thickness. Bake in a preheated oven at 400F for 15-20 minutes. Cool on rack.

SO HOW'D IT GO?

I made these two days ago. They were very good! Weren't very sweet though, so I think next time I'll add 1/4 cup light brown sugar. I added more almonds instead of raisins, used olive oil instead of corn oil and I used equal amount of mashed banana to replace the apple. My parents especially liked these (they've reached the age where very sweet things give them headaches)! I'll definitely make these again. Thanks for sharing your great recipe with us :)!
