Nutty Puffed Squares
What you need:
3/4 cup nut butter
1/2 cup liquid sweetener (corn syrup, agave nectar, brown rice syrup)
1 tablespoon vanilla extract
1/2 cup nuts or seeds
4 cups puffed cereal
What you do:
1. Stir together the nut butter and liquid sweetener in a heated saucepan on the stove.
2. When blended, take off from heat and add vanilla and nuts/seeds. Then, carefully fold in puffed cereal.
3. Lightly grease a pan or shallow plastic container (I used one of those huge margarine tubs).
4. Plunk the cereal mixture into the pan/container and pat down evenly. Store in the fridge to cool quickly, or leave out on the counter to firm.
Cut into squares and munch away!

Wow, these are so good and easy. I got a giant bag of puffed rice at the Indian grocery and used that, and it turned out amazing (and way cheaper than cereal). I also used chocolate chips, but I scattered them around the pan and then pressed the mixture into it so they wouldn't melt. I'll be making these a lot!
This has become a go-to recipe for me: simple, yummy and cheap. Vegan marshmallows aren't sold in any stores near where I live, and these are the closest to rice crispy treats I've been able to make.
And I have to fight myself not to sit there and eat the whole batch ;)
I used Envirokids cereal (like rice krispies but they have cocoa on them and are organic) so it was like a chocolate/peanut butter bar. The only difficult thing was that mine still crumbled apart very easily, but they tasted awesome. And they are super easy to make!
I just made these and I have to say that they are unbelievably good! I used agave nectar for the sweetener, natural peanut butter, dry roasted peanuts and added about 1/2 cup of vegan chocolate chips as the other poster said. I did taste the mixture before adding the chocolate chips though and I have to say it would be just as fantastic if I hadn't added the choc. chips! I also used about 5 cups of crisp rice cereal.
These aren't completely cold yet, but I just had to have some. They didn't stick together really great, but if I had used hydrogenated pb and some corn syrup I am sure they would really stick together great. But these weren't totally cold yet, so I am sure they will be fine once they are. Perhaps I will just use the 4 cups of cereal next time since with the pb these aren't overly sweet.
It is a great recipe though and I will definitely be making these again and again! I can't wait for my kids to try them, they are gonna love them!
I make bars a lot like these, but I add some chocolate chips or a broken-up dark chocolate bar to the cereal. Then when you stir in the nut butter mixture & stir it around, the chocolate melts & it all turns into a crunchy, nutty yumminess.
