Nutty Carob Balls

What you need: 

1 cup of Brazil nuts
1 cup of pitted dates
2 tablespoon carob powder
1 tablespoon lime juice
zest of a lime
1 tablespoon agave nectar (optional)
shredded coconut

What you do: 

Place brazil nuts in half a cup of water and soak for 30 minutes. After soaking combine brazil nuts, chopped up pitted dates, carob powder, zest of a lime and juice in a food processor. Pulse until well mixed and is able to form balls. For extra sweetness you can add Agave Nectar here and pulse a few seconds more.
Roll the mixture into twelve balls, and then roll through shredded coconut. Line on a cookie sheet and put in the freezer for a couple hours.
Best when cold!

SO HOW'D IT GO?

I love these. I omit the lime juice and use walnuts instead of Brazil nuts because I have never been fond of Brazil nuts. 

Biancarose is right: these are so much better when eaten frozen!
