Microwave Mint Chip Blondies

What you need: 

1/2 cup plain applesauce
2/3 cup sugar (turbinado or organic white)
1/4 cup canola oil
1 teaspoon vanilla extract
1/2 teaspoon peppermint extract
1 cup whole wheat flour
4 tablespoons Ghiradelli White Mocha Cocoa powder (I prefer and don't know of another)
1/2 teaspoon salt
1/2 cup chopped dark chocolate

What you do: 

Mix wet ingredients in medium-sized bowl. Measure out dry ingredients and add to wet. Add chocolate chunks and incorporate. Pour mixture into greased small microwaveable dish.
Microwave for 4-5 minutes. If you want to make nicely cut pieces, allow to cool.

SO HOW'D IT GO?

I literally just made this recipe. I also just literally threw it out (thank goodness I halved the recipe). I may be biased because I don't like cakey brownies (which these were). I used regular cocoa and vegetable oil instead. Seeing as I really doubt those substitutions made a marked difference (aside from making them brownies instead of blondies), I don't feel bad when I say these were pretty bland.

BUT,

the batter was absolutely DELICIOUS.

Thank you for educating me on the fact that fabulous "baked" goods can be made in minutes in the microwave!!!

I made these the other day and was so impressed (alterations: did use regular cocoa powder, a little less sugar, and didn't have chocolate chips on hands, and they were still awesome!).

Thanks for sharing -- I can't wait to experiment more with this recipe to see what other flavors I can get the microwave to churn out.

I made a few alterations:
used regular cocoa powder instead of white mocha,
upped the sugar to 1 cup versus 2/3 cup,
omitted the peppermint extract and chocolate chips,
instead of 1/2 cup applesauce (didn't have any), used 1/4 cup peanut butter and 1/4 cup water.
It was delicious! Definitely satisfied my brownie craving, as my oven is broken.
I'll probably make these several times a week now! Next time, I'll include the chocolate chips. The only reason I didn't this time was because I forgot.

This turned out really well, I left out the chocolate chips (didn't have any) also Idecided to leave out the peppermint exract. So they were just microwave blondies :) Thanks for the recipe

Absolutely!  I only used white mocha cocoa powder because I accidentally ran out of regular cocoa.  I meant to make mint chip brownies.  :)  One of my ideas was to add some crushed candy canes too.  A good reason to try again now that I now have the cocoa powder.

do you think these would work the same if you just used regular cocao powder rather than the white mocha stuff?  I know they wouldnt be blondies anymore, but they sound good no matter what!
