No Bake Peanut butter Chocolate Oat Cookies
What you need:
1/2 cup margarine (I use Earth Balance)
2 cups sugar (white or brown)
1/2 cup nondairy milk (I use soy)
4 tablespoons unsweetened cocoa powder
1/2 cup peanut butter
1/2 teaspoon vanilla extract
3 cups quick cooking oats
What you do:
1. Line cookie sheet with wax or parchment paper. In a large pot, bring margarine, sugar, milk and cocoa to a boil. Stirring constantly, let boil for 1-2 minutes until mixture is completely melted. Do not over boil.
2. Take mixture off heat and stir in peanut butter and vanilla until completely melted. Stir in oats.
3. Drop teaspoonfuls of the mixture onto prepared cookie sheet and allow to cool. When cool, turn cookies over to dry the bottoms.
4. Store in an airtight plastic container in the refrigerator.

Yum! I just finished making these and I added a few variations. I made three different versions out of one batch, just because I felt like spicing things up a bit, but I wanted variety. In one bowl I put some multi-grain cheerios in with the mixture, tossed it around, then spread it on a pan lined with parchment paper. In another bowl, I added some coconut and made balls with a melon-baller and put those on some parchment paper. The rest of the mixture went into miniature muffin cups (reese's size). I also sub. oil for the butter because it is all I had, though I didnt put too much in there (I eyeballed it, but it was about 1/4 cup). Also, it was a tad too sweet for me, next time I will cut back on the sugar as well.
Overall great recipe! and so much you can do with it!

Hey! You could try using rice milk?? Or even almond milk! I don't know if they would work the same, but it's worth a try! Hope this helps.

I grew up eating these, although with real butter. These are awesome, I have eaten a whole batch basically by myself in 2 days. I can't make them anymore if I don't want to eat them all!

These are some FINE cookies!!!!!!!!! I mostly followed the recipe as given, but i doubled the vanilla and used only about 1/2 C sugar. They turned out wonderfully! The recipe made 28 decent-sized cookies, but I tend to consume a great deal of dough while in the process! ;)
This recipe is AWSOME!
I make this with some shreaded coconut in it. Ah, YUM!
Does anybody know if you could use coconut oil in place of the margarine? I love the stuff on toast but I think the melting point might be to low.
