No Bake Peanut butter Chocolate Oat Cookies

What you need: 

1/2 cup margarine (I use Earth Balance)
2 cups sugar (white or brown)
1/2 cup nondairy milk (I use soy)
4 tablespoons unsweetened cocoa powder
1/2 cup peanut butter
1/2 teaspoon vanilla extract
3 cups quick cooking oats

What you do: 

1. Line cookie sheet with wax or parchment paper. In a large pot, bring margarine, sugar, milk and cocoa to a boil. Stirring constantly, let boil for 1-2 minutes until mixture is completely melted. Do not over boil.
2. Take mixture off heat and stir in peanut butter and vanilla until completely melted. Stir in oats.
3. Drop teaspoonfuls of the mixture onto prepared cookie sheet and allow to cool. When cool, turn cookies over to dry the bottoms.
4. Store in an airtight plastic container in the refrigerator.

SO HOW'D IT GO?

These are so yummy!!  We don't eat chocolate so I used 1 Tbs. carob powder and 4 Tbs. Cafix (coffee substitute) instead of the cocoa powder.  I also used 1 cup unrefined sugar and 1 cup Sucanat.  Next time I might add one more Tbs. carob, use less sugar and try a different source for sweetness.  Just for guilts sake!  These are absolutely amazing! ;)b  Thanks for sharing!

gooooood. i am the oldest of five and made these for my 3 little brothers. they LOVED them! i put too much butter though so be careful. it makes them oily :p

My mom used to make a normal version of these and I've made them Vegan as well and they're SO DELICIOUS! They disapear, like, they don't last the day unless I hide them in the freezer.

These were really tasty. I made it without cocoa as my mum can't eat chocolate and it was delish. I actually tried it with cocoa but I prefer it without. I used brown sugar, halved the amount, and topped some of them with melted chocolate. yum! The only problem I had was that they didn't quite set. Not sure what happened there.

This recipe is definitely a keeper.  It's great to make on those days when you don't want to turn on the oven.  I've made 2 variations of this recipe using quick cooking oats and old fashioned.  I actually prefer the recipe with old fashioned oats.  They can be a bit gritty, but I like the chewiness.

Peanut butter and chocolate are my two favorite things to combine so I just loved these! I used some vegan chocolate chips on top since I love chocolate and they were perfect.  :)

I halved the recipe and added some puffed cereal along with the oats.  Easy and pretty tasty!

These are fantastic. They taste just like the ones my grandmother makes. It's the quickest and easiest cookie recipe I've ever made, so I don't know how I'm going to resist making them all the time!

i made these with applesauce instead of butter and they were sweet and delicious! just like the old ones.

the only problem i had was them not stiffening as much as i wanted, probably due to the applesauce replacement. i'll still be making these ones again though.
