No-Bake Cookies
What you need:
1/4 cup oil
1/2 cup nondairy milk (I use soy)
4 tablespoons cocoa
2 cups sugar
1/2 cup peanut butter
3 cups oatmeal
What you do:
1. Mix first four ingredients (through sugar) well in pan, and place over lowest heat setting on burner.
2. Once it begins to boil, let boil at least 3 minutes. Stir in peanut butter until melted completely, than add oatmeal, stirring quickly.
3. With two spoons, scoop dough out and lay it down on aluminum foil surface to dry.

I used 1/3 cup brown sugar and 2/3 cup organic sugar. I put the stove on medium-high, added the sugar first, then the oil, then 1/4 cup Silk Nog (all I had), 1/4 cup water, and 1/3 cup cocoa (which is about 1 tbsp plus a tsp extra). This way, the sugar had a chance to melt and caramelize slightly. I brought this to a boil and let it boil about 3 min as instructed, then added 1/2 cup plus about 1 tbsp extra natural creamy peanut butter, a dash of cinnamon, and about 1/2 tsp vanilla. I stirred quickly until the peanut butter was fully incorporated. Then I added 1 cup of oats, stirred, another cup of oats, stirred, then the final cup of oats and stirred for about 30 seconds to make the oats cook slightly and ensure that it would thicken up correctly.
I halved the amount of sugar, and they were still PLENTY sweet. I know I don't have much of a sweet tooth, but I still found these very rich. They set up perfectly to that gooey texture no-bake cookies are supposed to have. This is a great base recipe, but I thought it needed a little extra something, though still very good! It made 24 mounds of about 3-4 cm.
amy: GoDairyFree.org has a recipe calling for maple syrup instead of sugar, which I have used with success. If you are going to use this recipe as a base, I would reduce the amount of liquid.
Question! My stove is broken does anyone know if you could do the first step somehow in the microwave?
You should be fine. Just make sure it boils in the microwave otherwise they'll never set up. Watch it closely, stir often.

These are AWESOME!. I added a tsp vanilla, 1/4 cup more peanut butter and 1/2-3/4 cup more oatmeal than called for and they turned out perfect. They are so close to what I remember eating as a kid.
I was wondering if anyone has made these with just agave or maple syrup instead of sugar and if they set up ok.
I just tried to make a mini-batch of these and failed. I think when you have so much less liquid, 3 minutes is way too long to boil the sugar. When I added the oats in, there wasn't enough liquid left to hold the oats together. So I added some water, but it ended up being to much water, so then I tried to cook it back down.... gahhh! haha They ended up being weird gelatinous cookie mounds. Next time I'll either try to make the full recipe or I'll bring the sugar just to a boil and move on with my life. And I think I'll take everyone else's idea and add in some chopped nuts!

YUMMY! I added about a tbsp of maple syrup and a splash of vanilla at the beginning, just for the heck of it.
I ended up having to add about 1/3 c more oats and 2-3 T more peanut butter- maybe because I used the natural kind, and I was still at the top of the jar- oily.
Anyways, these tasted just like the ones my family makes- no one veen noticed a difference- which was abig surprise sinc ethat reicpe is just bucketloads of butter and white chocolate chips and whatnot.
ANyway... thank you so much, very quick and easy too!

YAY! My mom always made these, but with a ton of unvegan-ness and whatnot, so I am so happy I found this. Definitely trying them as soon as I can ;D
