No-Bake Cookies

What you need: 

1/4 cup oil
1/2 cup nondairy milk (I use soy)
4 tablespoons cocoa
2 cups sugar
1/2 cup peanut butter
3 cups oatmeal

What you do: 

1. Mix first four ingredients (through sugar) well in pan, and place over lowest heat setting on burner.
2. Once it begins to boil, let boil at least 3 minutes. Stir in peanut butter until melted completely, than add oatmeal, stirring quickly.
3. With two spoons, scoop dough out and lay it down on aluminum foil surface to dry.

SO HOW'D IT GO?

OMG!!!!!!!!!!! These are the cookies my mom used to make when I was a kid- in our very un-vegan house! Tasting these again is like stepping back in time!

Lynmel - I must cook these a bit different than everyone else becasue the mixture you have before adding the oats never thickens on its own (from looking at the puddle inside a spoon) so i always figured it was the oat fiber binding it. Well either way not worth wasting the quinoa since we have both come tothe same conclusion. Thanks :)

Having a hard time restocking my gluten free oats anyone know if these would work with quinoa? What would i use to make them stay together since quinoa doesn thave that stick qualioty of oats...

It's not actually the oats that makes these stick together--it's the boiled sugar that does it.  From a food science perspective, they're more candy than cookie--essentially fudge.  The oats are added at the very end and are not cooked.  Raw quinoa wouldn't work, since it would remain hard gritty bits.  It's hard to imagine even cooked quinoa working...

Ah! These are great! I added 1/4 tsp. vanilla extract and 1/4 teaspoon cinnamon. Also, I used vegan butter instead of oil, mostly because we're out of oil, and also because I believe that cookies should taste like they're going strait to your hips. I halved the sugar, as some users have suggested, and added 1/4 cup hemp granola. They were tremendous. I seriously just ate six.

Oh, and I halved the recipe, with much success. I would like to try it with almond milk and almond butter, and perhaps with white chocolate carob chips...bliss. Thanks for the recipe! :)

:D    SO YUMMY!  I only made a half batch the first time because I ran out of coco powder. They were gone in about 10 minutes!  My brother went back out to the store and bought more ingredients so I could make a double batch!  The second time, I added some vanilla, reduced the sugar a bit and dusted the cooled off cookies with powdered sugar.  So delicious and easy!

These look great! Perfect vegan replica of the one si used to make for my nephews using instant pudding and milk!Cant wait to make them :)

just as good with rice milk instead,1/2 sugar and 1/2 to 3/4 cho chip bag and put into cupcake tin.extremely sweet/chocolatey ^_^

I've made a similar non-veg version of this cookie before and I am so happy to try it this way.  I cut the recipe in half and used less sugar and added vanilla.  Yummy! A quick and easy cookie when you need a sweet fix.

Love these no-bakes! Since they're sooo easy to make, I probably make them a little too often. ;)  They are an absolute hit among all the friends and family. My many times making this recipe, experience says, using regular organic oats makes all the difference. I've used quick organic oats (a little smaller in size) and they just aren't the same.
