Microwave Brownies

What you need: 

1 banana, mashed
3/4 cup sugar
1/4 cup olive oil
1 teaspoon vanilla
1 cup flour
1/4 cup cocoa
1/2 teaspoon salt
nonstick spray
chocolate chips, to taste

What you do: 

1. Grease a small microwave safe dish. In a bowl, mix together the banana, sugar, olive oil, and vanilla.
2. Stir in the flour, cocoa, and salt. Put prepared dish. Sprinkle with chocolate chips.
3. Microwave on high for 4 to 5 minutes (depending on how gooey you like them). Adjust the cooking time based on the power of your microwave.
Great for late night studying Snacks. You could probably even add some instant coffee to them before you cook them.

SO HOW'D IT GO?

I subbed 3/4 c. applesauce for the oil and banana to decrease the fat and eliminate the banana flavor.  I also added some peanut butter and some water to bring it to the proper consistency.
Mine came out kind of squishy and rubbery.  Which wasn't necessarily a bad thing, just entirely unexpected for brownies.  Who would have thought you could make brownies in the microwave.  Not what I expected, but still yummy and ever so easy!

If you don't want them to taste like banana, substitute 1/4 cup of pureed silken tofu for the banana.  You can also replace the olive oil with a second 1/4 cup of pureed silken tofu.  (For a total of 1/2 cup silken tofu instead of banana and oil).  Make sure you spray or oil the dish you cook it in.

Decent recipe, I just hate banana-y brownies. :)

Wow, the brownie was super rich and dense. I accidentally substituted CINNAMON apple sauce for the oil and chocolate milk powder for the cocoa powder (since I didn't have any around). This recipe is dangerously seductive to chocoholics.  ;)

hey this might sound stupid but i was just wondering what type of container you use to put in the microwave? like just a bowl or sumthing?
its rlly bad to put food in plastic containers in the microwave
the plastic can melt into your food and then get in2 ur immune system

this was moist and chocoalatey

but it was definately like eating a chocolate banana bread.
the banana was very strong!

I don't know about you, but these turned out really weird. First of all, the batter was extremely dry, so I added about 1/4 cup of water and it was still pretty thick. After cooking them in the microwave for 5 minutes, they tested really strange, more like over chocolately banana bread or a science experiment. Definetely won't be making them again.

OMG! these are not only the best vegan brownies i have ever had, these are the BEST brownies i have had in my entire life!!!! AND they are done in 4 minutes in the microwave!!!!! im amazed....i am in vegan heaven with happy little cows and chickens running all over the place  ;D  i added some soymilk (about 2 tablespoons) and used brown sugar and self rising flour (by accident) i really couldn't taste the banana at all and i forgot the chocolate chips, i have eaten a batch already, and i am planning on making a second one tonight, thank you so much for the awesome recipe!!!!!

bananas made it so much better, the idea of bananas in brownies sounded a bit sketchy, but they were amazing. try them frozen, ten times better. i also put nuts in them.
