Hemp Milk Jam Brownies
10 ounces jam (I used raspberry)
1/4 cup hemp milk
3/4 cup sugar
1/2 cup applesauce
2 1/2 teaspoons vanilla
1 1/2 cups white whole wheat flour
1/4 cup cocoa powder
1/4 teaspoon baking powder
1/2 teaspoon baking soda
2/3 cup chocolate chips
1. Preheat oven to 325° F. Line 8X8" pan with parchment. In a large mixing bowl, combine the jam, milk, sugar, applesauce, and vanilla.
2. Add in the flour, cocoa powder, baking powder, and baking soda, but don't mix it yet.
3. Melt the chocolate chips in the microwave, and add to the unmixed batter. Now mix it all together.
4. Pour the batter into the prepared pan. Bake for 45 minutes.
Source of recipe: I was searching on the Internet for a good way to use up some hemp milk I had in the fridge, and came across this lovely recipe. I don't remember where I got it, and I don't know if it's already on here, but it's pretty darn tasty!
SO HOW'D IT GO?
So, changes I made: only about 8 oz jam (strawberry) since that was the size of the jar; subbed oil for half the applesauce since sometimes it seems that too much applesauce/too little fat gives baked goods a weird rubbery texture; half raw, half regular sugar; 1 C regular white, 1/2 C whole wheat pastry flour.
Even with the smaller jar, I was a bit concerned the jam might be too much, but it turned out fine. Strong enough to taste, but not overpowering the chocolate or anything.
Overall, I thought they came out fairly well. Hot, they were maybe not fudgy enough, but still enjoyable. After several hours of refrigeration, the edges dried out a bit (maybe it would have helped to wrap them; I just put the whole pan in uncovered), but they did get more fudgy. While I can't say it's my new favorite brownie recipe, I'm glad I tried it, and probably will make it again someday :)
