Hazelnut-Hemp Granola
4 cups large flake oats
2 cups shredded, unsweetened coconut
1 cup whole hazelnuts (or any nut you fancy)
1/2 cup chopped walnuts
1/2 cup hemp seeds
1 cup agave
3/4 cup safflower or canola oil
1/2 cup dried fruit (I used raisins)
1. Preheat oven to 325 degrees F. Mix all the ingredients in a big bowl and empty onto a baking sheet.
2. Bake and mix around the granola every 10 minutes for 40 minutes.
3. Make sure it's a deep golden brown. When it's done, stir it up one final time and compress it so when it cools you can break it up, and have clusters.
This granola is amazing on vegan ice cream!!

Source of recipe: The original recipe came from Barefoot Contessa. I replaced the sweetened coconut with unsweetened and added more agave to make up for sweetness. I used safflower oil instead of canola because it's the only baking oil left that isn't genetically modified. I asked my sister what hemp seeds tasted like and she said hemp, but it was really subtle and made the granola taste kind of earthy but in a good way. Definitely something a hippie would eat.

I made this granola to give as Xmas gifts. I hope they like it!
My three modifications: I replaced hazelnuts with chopped pecans, added some cinnamon (about 1.5 tablespoons), and used dried cranberries for my dried fruit. I followed the instructions exactly, but I never got the granola to really "clump". For next time, what exactly should I have done to "compress" the granola?
