Creative Sesame Almond Granola

What you need: 

3 cups rolled oats
1/2 cup almonds, chopped OR other nuts or seeds, or a combination
2 tablespoons sesame seeds
1/4 cup tahini OR other nut or seed butter
1/4 cup liquid sweetener (brown rice, agave, maple)
2 tablespoon water
1 teaspoon almond OR vanilla extract
Pinch salt Optional:
1/2 teaspoon cinnamon
1/4 cup raw seeds (pumpkin, sunflower, hemp)
1/2 cup dried fruit (raisins, chopped apricots, cranberries, apple, blueberries)

What you do: 

1. Preheat the oven to 300 Degrees Fahrenheit. Lightly roast the oats in the oven just until you can smell them, stir and put in a minute more.
2. Combine the oats, almonds and sesame seeds in a large mixing bowl. Set aside.
3. Whisk wet ingredients together, (with the salt & optional cinnamon), in a small bowl or pint measuring cup. Stir wet mixture into dry mixture until evenly coated.
4. Spread onto a cookie sheet and place in preheated oven. Bake for 8 to 11 minutes on each side, stirring once in between. The granola will be ever so slightly browned and firm. It will dry out a bit as it cools. Add in the optional dried fruit and raw seeds. Let cool completely and store in an airtight container.
Enjoy it topped with fruit or flax meal, your favorite nondairy milk, nondairy yogurt, applesauce, or on its own.
