Happy Vegan Chocolate Chip Cookies
2 cups unbleached flour
2 teaspoons baking powder
1/2 teaspoon salt
cinnamon, to taste, optional
handful vegan chocolate or carob chips
1 cup raw sugar (turbinado; sucanat works too, but sucks up a lot of the moisture)
1/2 cup canola or vegetable oil
1 teaspoon vanilla
1/4 cup water
1. Very important-make sure all ingredients are at room temperature. It will work if they're not at room temp but it works much better if they are. Also while your oven is pre-heating put the cookie sheets you are going to use on top of the oven so they get preheated as well. Preheat oven to 350 degrees F.
2. In a large bowl, mix together flour, baking powder, salt, and cinnamon. Stir in chips. Make a well in the center and set aside. In a medium size bowl, add together sugar and oil; mix well.
3. Add the vanilla and then add the water; mix well. Add the wet to the well in the dry. Mix it well but be careful not to overwork it. Add more chips if you need to.
4. Spoon onto ungreased cookie sheets. Put them in the oven. Bake for 5 minutes and then flip and rotate the sheets (top to bottom and 180 degree rotation). Bake another 4 minutes and check them. The cookies are done when they seem a little bit softer then you want them to be. They will harden up some as they cool. I usually go in 2 minute increments from here until they get to where I like them.
5. Take them out when they are done and move them to wire cooling racks. If they split or come apart when you try to remove them let them sit on the pan for 2 minutes before transferring them to the racks.
These cookies have come a long way, lots of time and tasting spent on getting them to where they are now. Vegans and non vegans love them. OK so this is not recipe specific but every time I make cookies I end up with cookie nightmares over here, I end up with spongy cakelettes, nothing like cookies. Bakers please help what an I doing wrong. :-D :-D :-D :-\\
make the "chocolate cookies like they should be" recipe and follow it! no subbing applesauce for oil - go full fat!! :)

These are not our FAVORITE chocolate chip cookies, but they are still good. It's a bit more complicated that most cookie recipes (not actually complicated, though), and I don't know if that's necessary..but they turned out well. I ran out of oil, so I also used about 1/8 cup of melted EB. No cinnamon b/c we don't like it in chocolate chip cookies...and I also had to add about 1/8 cup water. I should have greased my sheets more b/c they stuck a bit (not usually a problem with cookies), and they are a little too..."doughy"/not flat enough. All in all, I'm glad I finally tried the recipe, and they are tasty. I used WW pastry flour, FC, and baked them for about 10-12 minutes.
eta: It is now two days after I made the cookies..and I must say..they are MUCH better the day after..and after. I really love them now. They taste like (much better) Chips Ahoy.
Yummy. I just threw all the ingredients together and stirred.
5 minutes, turned pan and cooked for 4 minutes more. Perfect!
SO. FREAKING. GOOOOOOOOOOOOOOD. I'm so sick of recipes that try to be something they're not, with the fake milk and fake eggs, and fake baby cow tears. Forget that junk. I'm much happier with recipes that are vegan to BEGIN with. This not only knocked it out of the park with stuff I have lying around the house, but it's so easy to make that I could trust my nephews and nieces with the recipe.
I added a splash of extra water at the end, and added like a teaspoon and change of cinnamon. I also used broken cashews and chocolate chips. VERY yummy. I'm quite pleased with the results, and am forever grateful for a recipe that I can memorise, and repeat a thousand times. :)

These cookies are absolutely delicious!!
The first time I made these I added brown sugar instead of the raw sugar
I used soymilk instead of water
and I added PB! they came out so good.
Im not the biggest fan of chocolate but these cookies really wowed me!
Today I made a second batch but this time I didnt replace or add anything
and they came out just as delicious as the first time! 5 stars!

just to let people know to make the cookies not burn put parchment paper on the pans. and they do not need to be flipped i never do that.the cookies are very good with strong coffee instead of water. but you may need to add extra sugar if using coffee because it takes away some of the sweetness.
made these last night around midnight on an impulse... MMM! i changed it around a bit. used earth balance instead of oil (they were a bit greasy, think i'll use some applesauce to replace some buttery stuff next time) and replaced a bit of the flour with cocoa powder for a chocolatey cookie. we made a dozen really big cookies and they had to bake around 20-25 minutes, but they were DELISH!
