Girl Skout Thin Mintz

What you need: 

1 cup or 2 sticks margarine, softened
3/4 cup sugar
2 cups all purpose flour
1/2 cup unsweetened cocoa powder (I use Chatfield's)
1/2 teaspoon peppermint extract
1 12 oz. bag of semi-sweet chocolate chips
1/2 teaspoon peppermint extract

What you do: 

My mom went to the store yesterday and picked up several boxes of girl scout cookies...and, of course, they're not vegan! so I spent the night in the kitchen...:)
NOTE: Either use a stand-up mixer such as a Kitchen Aid or beat by hand. The dough will cause a hand mixer to overheat. THESE ARE ICEBOX COOKIES!
Cut margarine into tablespoons and place in mixing bowl. Cream together sugar and margarine.
Slowly mix in flour, cocoa, and 1/2 teaspoon mint extract (this should take some time...the dough will be very thick).
Lay out plastic wrap and place dough onto it. Shape into a log (mine was about 10 x 2 1/2) Chill overnight.
Preheat oven to 350 Fahrenheit.
Cut dough into about 1/4 inch cookies. Place on ungreased baking sheet.
Bake around 12-14 minutes. (You can also make smaller versions, about 1 inch, and bake 7 minutes).
Put on wire rack and cool completely. Don't taste them when they're still warm...they're gross hehe.
Pour bag of chocolate into a bowl and heat for 1 min on 50% power. Stir with knife until the bowl is cool. Continue to melt chocolate on 50% power 10 seconds until all is melted (about 3 times).
Pour in 1/2 teaspoon mint extract and stir well.
Lay out parchment paper (or whatever you prefer) and spread chocolate onto cookies...this is messy!! Let cool, and ENJOY!

SO HOW'D IT GO?

These were weird for me. I blame the carob. Do not use carob for these. Or anything, actually. It was my first time using it, and it's not too good. If I make these again, I'm definitely gonna use the vegan chocolate chips from Trader Joe's instead. Or maybe I'll just eat the dough as cookies, because I loved that part!

Excellent job, meowmeowmeow!!  These cookies were so good and exactly what I remembered Thin Mints to taste like... I used to eat Thin Mints like a madman.  I kept them in the freezer so they'd taste even better.  >:D

I wanted to add a few tips for making these cookies:

*Be sure you slice the cookies VERY THIN-- no thicker than 1/4" wide, whle I'd recommend 1/8" to thinner is possible. 

*To cut: Use a piece of floss (middle of the floss under the roll, cross the floss ends over the top and pull).  Or, use a meat slicer!  :o

*Wait till the cookies cool and harden to apply the chocolate to the top.

I finger-painted the chocolate on the cookies, then flipped them over after the chocolate hardened and finger-painted that side too.

these turned out pretty good, despite some modifications I shouldn't have made...I used whole wheat flour, which I definitely don't recommend.  It made the dough a lot rougher, which made it impossible to slice as thinly as you should.  Also, it made the finished cookies gritty, which I didn't mind, but if you're trying to impress non-vegans, it made them taste/feel "healthy" (even though they really weren't).  So if (when) I make them again, I'll definitely stick with either all-purpose flour or whole wheat pastry flour.  I also added some soymilk to the melted chocolate chips to thin it out a bit, which made it a lot easier to dip the cookies.  They tasted pretty genuine, but a little bit richer since I used ghirardelli chips.  so...in conclusion, they taste good, they're a good replacement for thin mints, and I'll make them again using white flour.

i've just been wanting a chocolate cookie that wasn't too complicated or had too many ingredients so i made these just now. i didn't chill them and ended up baking them for about 8 minutes.  and i didn't have any peppermint extract or chocolate chips, and the dough seemed pretty dry so i added some vanilla and some soymilk. let it cool, spread some peanut butter on it and yum yum :) thanks!

I just made these and they're not exactly like I remember thin mints (can anyone figure out how to veganize those caramel coconut ones, by the way?), but they are delicious nonetheless. Also I must have made them a little too big so I'm calling them "thick mints" ahahha.
Anyway, great!

Thank you!! I'm definately going to have to try these. My mom just brought home several packages of girl scout cookies (including thin mints) and it has been KILLING me since I have no vegan snacks to munch on to ward of the unhealthy and unvegan foods my family eats.

I will let you know how they turn out.  ;D
