1 cup or 2 sticks margarine, softened
3/4 cup sugar
2 cups all purpose flour
1/2 cup unsweetened cocoa powder (I use Chatfield's)
1/2 teaspoon peppermint extract
1 12 oz. bag of semi-sweet chocolate chips
1/2 teaspoon peppermint extract
My mom went to the store yesterday and picked up several boxes of girl scout cookies...and, of course, they're not vegan! so I spent the night in the kitchen...:)
NOTE: Either use a stand-up mixer such as a Kitchen Aid or beat by hand. The dough will cause a hand mixer to overheat. THESE ARE ICEBOX COOKIES!
Cut margarine into tablespoons and place in mixing bowl. Cream together sugar and margarine.
Slowly mix in flour, cocoa, and 1/2 teaspoon mint extract (this should take some time...the dough will be very thick).
Lay out plastic wrap and place dough onto it. Shape into a log (mine was about 10 x 2 1/2) Chill overnight.
Preheat oven to 350 Fahrenheit.
Cut dough into about 1/4 inch cookies. Place on ungreased baking sheet.
Bake around 12-14 minutes. (You can also make smaller versions, about 1 inch, and bake 7 minutes).
Put on wire rack and cool completely. Don't taste them when they're still warm...they're gross hehe.
Pour bag of chocolate into a bowl and heat for 1 min on 50% power. Stir with knife until the bowl is cool. Continue to melt chocolate on 50% power 10 seconds until all is melted (about 3 times).
Pour in 1/2 teaspoon mint extract and stir well.
Lay out parchment paper (or whatever you prefer) and spread chocolate onto cookies...this is messy!! Let cool, and ENJOY!
