Garbanzo Tacos
What you need:
2 (15 ounce) cans garbanzo beans (1 can, drained)
1 (1 1/4 ounce) packet vegan taco seasoning
lettuce, shredded, to taste
6 large tortillas or 12 hard taco shells
tomatoes, chopped, to taste
onions, diced, to taste
salsa, to taste
What you do:
1. Dump both cans of beans into a skillet (but use the liquid from only one can). Dump in the taco seasoning.
2. Stir and let simmer for about 10-15 minutes.
3. Add beans and other ingredients to your tacos, burritos, and/or taco salads.
Especially good recipe for those who aren't crazy about the flavor of garbanzo beans. The seasoning takes over.

SO HOW'D IT GO?
;D Yumm! Im new to the veggie way, and this is a meal my hubby and kids will eat!
Can I just say this is one of my favorites?! We eat this weekly at my house. Sometimes we do it the quick and easy way, and other times we add canned chilles, saute'd onion and chopped colored bell peppers, and throw in some cilantro. It makes a quick and easy evening dinner when I don't feel like whipping up a three course meal. ;)b 5 stars in my book!

Well, I really didnt know what to expect with these. I thought they would be either too seasoned or taste fishy, but hey!... they really did make a good filling! Thanks for the idea!

Great idea! I used the Taco Bell taco seasoning as suggested in the reviews, but I think next time I'll make my own (Allrecipes has a 5-star one with like 700 reviews!) After the beans were well heated, I mashed about 80% of them, which was easy to do. What a simple, quick, yummy recipe! My omni husband even thought they were great.

These were good. I used leftover chickpeas from dried. I heated them through, then pureed with olive oil and a little water and seasoned with salt, pepper and Spike. I didn't have salsa so I sauteed an onion with cumin and chili powder, then added green pepper and added a small can of petite diced tomatoes and three chopped garlic cloves and added more chili powder, salt, pepper and chipotle powder. Topped it with Better than Sour Cream, cilantro and green onions. I should have added some fresh lime juice to the tomato mixture, but other than that is was great. ;)b
Delicious recipe. Easy to make and nutritious. Kids liked it too.
